Marissa's Avocado Soup

Avocados are a staple in our home. My 9-month-old eats some avocado just about every day. And who doesn't love some delicious guac?

I found this book at the library called The 10 Things You Need to Eat, and I decided to make the soup on page 32 called "Avocado Soup with Cilantro, Coriander, Cumin, and Lime." I already had just about all the ingredients for it, which made it even easier.


Ingredients list:
-1 large leek
-3 T. olive oil
-3 medium celery stalks, roughly chopped
-1 large onion, roughly chopped
-2 bay leaves
-1 quart chicken/veggie stock
-1/2 t. ground coriander
-1/4 t. ground cumin
-1 avocado, pitted, peeled, and mashed
-Juice of 1 lime
-Salt and pepper
-1 small bunch of scallions, finely chopped
-1 small bunch of cilantro, finely chopped

Step 1: Trim the root & leaves off of the leek, and then cut it lengthwise and rinse. Roughly chop it.

Step 2: Heat the olive oil in a pot/dutch oven over medium-high heat. Add the leek, celery, and onion and cook for about 5 mins.


I used that five mins to mash my avocado. Mmmm....


Step 3: Add the bay leaves, stock, coriander, cumin, avocado, and lime juice, and simmer for about 10 mins. Season with salt and pepper.


Step 4: Relish in how easy this recipe is. Just top with cilantro and scallions (I used green onions) and enjoy!!
