Alina's Super Green Soup

My super green soup is a mish-mash of good for you veggies, and since it's completely natural and exceptionally healthy this soup is an all-around winner. It reminded me a little of split pea soup, maybe because of the texture but also because of the taste. Adam said he would "definitely eat it again" and it was super easy to make. This dish was a healthy success!



Makes 6 servings. 20 minutes prep time. 45 minutes total.
  • 1 bunch of spinach, loosely chopped
  • 1 small crown of broccoli, loosely chopped
  • 1/3 a head of cauliflower, loosely chopped
  • 1 bunch of kale, loosely chopped
  • 1 yellow onion, chopped
  • 4 cloves of garlic
  • Salt and pepper to taste
  • 1 tsp cardamon
  • 1 tsp cumin
  • 2 tablespoons of ground ginger
  • 1 can of veggie stock
  • 1-2 tbsp EVOO
Saute the onion and ginger for about 5 minutes stirring constantly until your nose goes "Whew! That smells pretty good!" Add the garlic and saute for another 60 seconds. Don't stop stirring!

Add the spinach and kale and saute for 5 minutes, until starting to wilt, and then add the broccoli and cauliflower.
Saute for another 5 minutes. Add the can of veggie stock and then fill the can with water and add that as well. Simmer covered for 20 minutes. Add salt and pepper, cardamon, and cumin. Let simmer for a few more minutes, and then blend everything together. I used an immersion blender, but a food processor would work well too.
Taste it and add additional seasoning if it's needed.

Now serve it up and chow down on more than your daily serving of veggies!
