Mom's Cucumber Soup

And if you really have an excess of cucumbers, you can use the extra to create some super refreshing cucumber water (exhibit C).

Ingredients:
About 2 pounds of cucumbers
2 cups plain yogurt
1 clove garlic, finely minced
1 tsp white wine vinegar
3/4 tsp salt
1/4 tsp white pepper
1 tomato, chopped for garnish
4 small basil leaves, cut into julienne strips

In a blender, puree the cucumber and yogurt together until smooth. Add the garlic, vinegar, salt, and pepper. This makes about 6 cups of soup.
Cover and refrigerate until smooth. To serve, tops with the tomato and basil. Mom likes to serve it in margarita glasses topped with another sliver of cucumber, which is super cute.

If you want to make cucumber water too, thinly slice a cucumber, add it to a pitcher of water, cover, and let it sit overnight. In the morning, you'll have super refreshing cucumber water!
