Total time: 15 minutes. Makes 6 servings.
Ingredients:
- Edamame (1 lb frozen or fresh)
- 2 tbsp olive oil
- Seasonings of your choice (I like chili powder, cumin, garlic powder, salt and pepper. Edamame should have a little zip, so the more generous you are with your seasoning quantities the better)
Bring a generous amount of water to a boil in a medium-sized pot. Add the edemame. Boil the edamame for 5 minutes. Mix the seasonings with the olive oil. Toss the edamame with the olive oil blend.
