Alina's Mashy Beans with Wilty Spinach
If you're like me, the idea of mashing up white beans and serving them like mashed potatoes might be a little foreign.
Really? Like mashed potatoes? Intriguing.
Really. Like mashed potatoes. And it's delicious.
I searched for a great recipe, and wound up with another recipe from Closet Cooking. I won't go through the whole recipe, since I made it just like it's listed on that blog, but here's the gist:
Gather your ingredients. It doesn't call for anything too crazy, so this would be easy to make spontaneously. The only thing I don't regularly keep on hand is the kalamata olives.
Here's what's in it:
1 tablespoon olive oil
1 medium onion (diced)
4 cloves garlic (chopped)
1/2 teaspoon red pepper flakes
1 cup vegetable broth
2 (19 ounce) cans white beans (drained and rinsed)
1/2 teaspoon dry thyme
1/2 teaspoon dry rosemary
1/2 teaspoon dry oregano
1 bay leaf
salt and pepper to taste
1/2 cup vegetable broth
1/4 cup kalamata olives (pitted and coarsely chopped)
8 ounces fresh spinach (rinsed and coarsely chopped)
1/2 lemon (juice)
Follow the instructions on Kevin's blog, adding additional ingredients as you cook. Doesn't that look delicious already?
This was a super easy recipe and while it miiiight be able to pass as a main dish, I served it with salmon and a little side salad to round it out. Eat up!
