Marissa's Lentil Loaf

This recipe comes from food.com and can be found here. I just had to change the name of it from "vegetarian meatloaf" to "lentil loaf", because you have to love this dish for what it is. Love it because it's an awesome way to eat lentils & oats, not because lentils and oats are fake meat. Lentils and oats will never be meat. And that is okay. They are lentils and oats, not meat. Ok, down from the soap box...

Ingredients:
  • 2 cups water
  • 1 teaspoon salt
  • 1 cup lentils
  • 1 small onion , diced
  • 1 cup oats
  • ¾ cup grated cheese (cheddar, swiss, jack or american)
  • 1 egg , beaten
  • 4 ½ ounces spaghetti sauce (or 4.5 ounces tomato sauce)
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1 tablespoon dried parsley
  • ½ teaspoon seasoning salt
  • ¼ teaspoon black pepper
Step 1: Boil salt and water in a saucepan. Add lentils and simmer 25-30 minutes until most of the water has evaporated and lentils are soft.

Step 2: Drain and partially mash lentils.

Step 3: Stir in onion, oats, cheese, egg, tomato sauce, garlic, basil, parsley, seasoning salt, and pepper.

Mix well. :)

Step 4: Spread into a sprayed loaf pan (I made a double recipe).

Step 5: Bake at 350 for 30-45 mins and then cool for 10 mins. Done!
